Banana Nut Bread

Super easy peasy

Ingredients

  • 1 Stick Softened Salted Butter (1/2 cup, salted or unsalted, but add extra salt on the back end if you go unsalted here)
  • 1/2 cup Brown Sugar (Packed, and your preference for light or dark)
  • 1/2 cup Sour Cream (or measure with your heart)
  • 2 Large Eggs
  • 3 cap-fulls Vanilla (measure with your heart)
  • 3 Large Bananas (freeze your ugly nanners and thaw or roast at 350 for 30 min when you want to bake this)
  • 1 1/2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt (or measure with your heart)
  • Your choice of chopped nuts! I like to chop chocolate covered almonds! Measure with your heart, or about a half cup.

Instructions

  1. Preheat the Oven to 350 degrees Fahrenheit.
  2. Cream Butter and Sugar: Mix the butter and both sugars together until light and creamy, save the butter wrapper for your pan.
  3. Grease Your Pan liberally with the butter that stuck to the wrapper, and set the pan aside.
  4. Add Eggs, Sour Cream, Vanilla, Bananas to the butter and sugar mixture.
  5. Mix Dry Ingredients: In a SEPARATE BOWL, mix dry ingredients (flour, salt, baking soda, baking powder, nuts), and stir until combined. Adding the nuts to the flour mixture first will help them float instead of gathering at the bottom of the pan.
  6. Add Dry to Wet in small scoops to avoid developing clumps. It won’t really hurt if you dump it all in at once, though, let’s be real.
  7. Pour batter into pan (evenly)
  8. Bake at 350 degrees Fahrenheit for 35-40 min or until golden on top and your knife or toothpick comes out nearly dry.
